Whole Wheat Banana Pancakes

(12-18 Months)

"Maybe we can sleep in // Make you banana pancakes // Pretend like it's the weekend now."

Inspired by Jack Johnson's song famously called, you guessed it, "Banana Pancakes", these will make any weekend morning extra special. In fact, this is our go-to Father's Day Recipe.


1/2 cup whole wheat flour
1/2 cup all purpose flour
2 tsp. baking powder
1/2 tsp. kosher salt
1 pinch freshly ground nutmeg
2 very ripe bananas
1 tbsp. brown sugar
2/3 cup skim milk (+ a little extra if batter is too thick)
1 tbsp. vegetable oil
1 tsp. vanilla
1 large egg

Mix first five dry ingredients together and set aside. In a mixer, mash together bananas, sugar, milk, oil, vanilla, and egg. Slowly add dry ingredients to wet and mix just until blended.

Heat non-stick pan on medium heat. Pour 1/4 cup of pancake mixture into medallion shapes and let cook for a few minutes until bubbles begin to form on surface. Flip pancakes and cook for about 2 more minutes.

This makes enough for a family of four, but if you have extra, you can freeze pancakes in freezer bag, placed between sheets of parchment paper.
