Ode to Soy
A Recipe for 9-12 Months
Posted by Christen Babb
Harkening to Beethoven’s Ode to Joy, this dish is a symphony of health promoting isoflavones and probiotics. Recent research shows that isoflavones, an antioxidant prevalently found in soybeans, contains powerful cancer preventing properties. Probiotics, found in “live active culture” yogurt, help keep the digestion system healthy and can strengthen immune systems.
2 cups frozen and shelled soybeans, or edamame
½ cup plain, whole milk yogurt (we recommend greek yogurt)
Steam soybeans in steamer basket for about 6-8 minutes, or until tender. Cool slightly.
Put cooled soybeans in food processor, along with yogurt. Blend until completely smooth.
Ode to Soy is best served right away, but can be stored in refrigerator for 3-4 days. We do not recommend freezing.
*Please use caution when introducing soy into your baby’s diet, only after seeking the advice of a pediatrician. While soy contains many healthy vitamins and minerals, it is also a common allergen. We recommend not introducing soy until your baby is at least 9 months.
If you suspect a soy allergy, consult your child’s pediatrician immediately.
