Turkey Taco Bites

A Recipe for Toddlers

They are perfectly portioned for a toddler's tiny hands, but kids of all ages will love these wholesome and delicious taco bites.


1 tbsp. extra virgin olive oil
1 lb. ground turkey
1 onion, diced
1 cup yellow corn
1 tbsp. mild chili powder
1 cup low sodium chicken stock
1/4 cup chopped cilantro (plus more for garnish)
2 tsp. kosher salt
2 cups shredded Monterey Jack Cheese
12 corn tortillas
Cooking spray


Preheat oven to 350 degrees.

Coat cupcake tin with cooking spray. Fold 12 corn tortillas into cups and place dutch oven, into cupcake molds. Set aside.

In dutch oven, heat oil on medium high heat. Add turkey and cook through until browned on outside. Remove turkey from pot and let drain on a plate covered in a paper towel. Set aside.

In same dutch oven, throw in diced onions and cook until translucent. Add corn and then add the cooked turkey back into the dutch oven. Add chili powder, salt, chicken stock, and cilantro. Let simmer for about 5 minutes.

While turkey and other ingredients are simmering in dutch oven, sprinkle a tablespoon or so of cheese into each tortilla cup. Then add the turkey mixture on top of cheese, then add another sprinkle of cheese on top. Bake for 10-12 minutes, until cheese is melted. You can garnish with a pretty, little cilantro leaf if you are feeling fancy.

*To make this a vegetarian recipe, swap ground turkey with black beans and chicken stock with vegetable stock. It's delicious.
